抹香鲸吞食大型软体动物时会刺激肠道，肠道就会分泌出一种特殊的蜡状物，将食物残骸包起来，慢慢地就形成了龙涎香。
有的抹香鲸会将其吐出来，有的会从肠道排出，排入海中的龙涎香起初为浅黑色，在海水的作用下，渐渐地变为灰色、浅灰色，最后成为白色。
龙涎香是一种非常高级且罕见的香料，人工难以合成，不是抹香鲸每一次分泌排泄就有龙涎香，也不是每一条抹香鲸都有龙涎香。
为了避免有人觊觎龙涎香而偷猎抹香鲸，很多国家已禁止捕捉抹香鲸。
